Humans and horses are water-based organisms. Our blood, which carries the nutrients necessary to nourish our tissues is water and makes up more than half of our weight. However, some health valuable compounds are fat-soluble. It is these types of compounds that are often of very low bioavailabilty. If you have trouble dissolving something in water, chances are your body will too and will have equal problems absorbing it. Since oil and water do not mix, the body may compensate for this by producing micelles, unique tiny spheres with a hydrophilic (water loving) outer layer designed to ferry fat material from the gut across the intestinal wall into the blood stream. This is what we are trying to do when we artificially produce micelles and liposomes encapsulating low water soluble compounds or compounds that are easily destroyed in the gut. So, if you are taking a very water soluble compound like any of the Vitamin C compounds, I really don't see much difference in innate bioavailability. They are all water soluble in about equal amounts.
